Love tacos?! Love pizza? So do we! Why not combine two family favorites? Here, we used a pre-made gluten free crust and added lean ground turkey over thinly spread enchilada sauce instead of pizza sauce.
We added sautéed onions and yellow bell peppers to both but halved cherry tomatoes and dark chili peppers to one (garnished with raw arugula afterwards) and on the other some Monterrey jack and mild cheddar cheese.  Although we grilled to perfection, baking for 10-15 minutes at 425°F would be a close second.
Would it surprise you that we had no leftovers??
