Here’s a super simple and tasty option for a side dish that packs a ton of flavor!

Roasted cauliflower can be a versatile side dish you can create in a pinch. Here, we make it “buffalo style” by adding some roasted tomatoes to liven the dish, with a sweetness to balance the spice of the Cajun seasoning. To really top it off, consider a low-calorie blue cheese!
1 whole cauliflower, de-stemmed and cut coarsely, placed in a bowl.
1 cup halved, or quartered cherry tomatoes
1/2 cup olive oil
Coat and toss the cauliflower and tomatoes, then place to a baking pan. Generously apply seasoning of choice— we used Spiceology’s salt-free version of “Black Magic”, which is a Cajun-style blend. Roast at 400F until the cauliflower florets start to brown very slightly and the vegetables are tender, which should be about 15-20 minutes. For the final touch, consider adding some low-calorie blue cheese crumbles and place back into the oven as it cools for another 3-5 minutes.
