In a non-stick pan, heat two tablespoons of sesame oil. Add 1/4 cup onion and sauté until translucent. Add two cups (or one small bag) of cauliflower rice. Once the rice has thawed over the heat, add a low sodium soy sauce to taste along with 2 minced garlic cloves (more or less, if you like). Next, add your protein— we recommend two eggs (or for a lower fat version, try 3 egg whites). For a vegan option, try tofu crumbles. Lastly, add a 1/2 tablespoon of sesame seeds and two thinly sliced scallions. Remove from heat and serve! If you want to truly make this a nice meal by itself, try sautéing diced chicken or tofu cubes over sesame oil in a separate pan until brown, then cover with teriyaki sauce and reduce heat. Cook until your protein is well coated and the sauce has thickened. Mix with the rice and enjoy!
